We are André and Philippe Sambussy, two brothers bound by the deep roots of our native land: the Hauts-de-France. Here, every furrow tells a story, and every potato carries the soul of a proud and generous region.

For four years, we dreamed of honoring this land that shaped us : creating spirits filled with meaning and heart. TERRA DISTILLERIE is more than a business; it is a tribute to our heritage, to our family values, and to a sincere commitment to our terroir.

We chose a bold path: elevating the humble potato, a local treasure, by crafting our own pure alcohol base from our nearby fields. Every step, from harvest to distillation, is guided by respect, dedication, and passion.

ARTISANAL EXPERTISE

From the richness of the Hauts-de-France soil to the precision of every stage in the transformation process, our craft celebrates quality, balance, and authenticity.

We carefully select potato varieties, respect the rhythm of the seasons, use slow cooking, tailor-made fermentation, and precise distillation — every step is designed to elevate the raw ingredient.

With meticulously chosen aromas and slow reduction for perfect smoothness, we create spirits that are elegant, deep, and distinctive.

1. RICH LAND, DEEP ROOTS

In the heart of Hauts-de-France, our farmers tend to an exceptional land. Enriched with fertile clay-loam soil, the region offers deep, well-balanced terrain—ideal for cultivating high-quality potatoes. Each step of the process is handled with meticulous care, sometimes requiring up to 10 interventions between soil preparation and harvest to ensure a raw material that meets our highest standards.

2. THE ART OF SELECTION

Among nearly 200 varieties grown between Dunkirk and Compiègne, we’ve chosen those that best express the character of our terroir.

This precise selection gives our spirits their elegance, finesse, and unmistakable personality.

 

3. LETTING NATURE LEAD

We plant in spring, when the earth is ready.

Growth follows the rhythm of the seasons, never rushed.

Our potatoes are harvested in summer at full maturity, ensuring optimal aromatic richness.

4. THE GENTLE POWER OF SLOW COOKING

To preserve the full complexity of our raw ingredients, we rely on slow, controlled cooking that respects the integrity of the product.

It’s during this stage that the first aromatic notes emerge—the foundation of our spirits’ complexity.

5. TAILORED FERMENTATION

We use specially selected yeasts for their ability to unlock deep, layered aromatic profiles.

This slow, almost living fermentation is a pivotal moment where our spirits begin to take shape—gaining character, structure, and depth.

6. PRECISION DISTILLATION

Distilled at 96% ABV—the minimum required for the vodka and gin denominations—our elixirs are crafted using state-of-the-art stills.

Our distillation columns allow us to isolate the alcohols with great precision, keeping only the pure, balanced, and vibrant heart of the distillate.

7. THOUGHTFULLY CHOSEN AROMATICS

For our gins, every ingredient is carefully selected: juniper berries, peels, flowers, spices... Natural flavor infusion is carried out gently, using a taste extractor that captures the essence without overpowering. The result: a pure, nuanced gin with a refined aromatic signature.

The final step is a delicate balancing act: reduction. Over two weeks, our vodkas and gins are slowly brought down to 40% ABV using pure water—creating a silky texture and smooth mouthfeel that define our exceptional spirits.
